Eggplant saute
Ingredients:
eggplant: 4-5
capsicum: 4-5
onion: 4-5
carrot: 4-5
tomatoes: 10
garlic: 2 heads
pickled ground pepper/chilli: to taste
tomato paste: 1-2 tbs
oil
salt, pepper
Directions:
Cut the onion.
Grate the carrot.
Finely chop the garlic.
Make cross-like cuts on the top of tomatoes.
Cover them with boiling water and a little bit later peel the skin.
Cut the capsicum.
Cut the tomatoes.
Cut eggplants in cubes.
Preheat pan and add oil.
Saute the union.
Add 2/3 of garlic.
Add carrot, eggplants, tomatoes, tomato paste.
Add chilli / ground pickkled pepper (to taste)
Add capsicum.
Add 1/3 of garlic.
Salt, pepper (to taste)
